Wine Making Process
SINTRA MOUNTAIN AND THE ATLANTIC
As a natural barrier, the Sintra mountain magnifies the influence of the Atlantic ocean, with coastal salty fog as the often scenery. The result are wines that remind us of the sea and the hilltops; very aromatic, mineral, refreshing acidity, elegant, balanced and the peculiarity of having savory salty notes.
MANUAL HARVESTING
The grapes are harvested and carefully selected by hand, being crushed afterwards and pressed in cold.
FERMENTATION
Whites and reds have either fermentation in tanks, at room temperature or inside the oak with a vital control of temperature.
OAK BARRELS
From middle to long evolutions our wines benefit from the wood tanins and aromas from the french oak.
